Reducing customization to decrease operational complexity

"For concepts like Flower Child that have lots of salads and bowls, typically these types of restaurants have a very high degree of customization, which adds a lot of complexity and increases the likelihood that, missing items occur. When this happens at Yumpingo we notice that this is one of the leading causes of guest dissatisfaction, and it's also very expensive to recover, so you want to limit that as much as possible. Looking at their salads and bowls they've done this in a very smart way. "

Changing consumer preferences

"Consumer behavior seems to be changing quite rapidly and in unpredictable ways. We're seeing some consumers wanting to spend less money out in a casual dining setting and spending more time cooking at home. We're seeing consumers going from a more premium offering within a certain category into a cheaper or better value one in a category as well. I think if you're a restaurant right now, you have to be looking very carefully at your value proposition in the market, how you're priced in the market, and what are the specific occasions that you are looking to sell for." 


Family meal micro-catering

"They have identified and are tapping into a new trend. It's almost micro-catering. They have identified that they is a family style occasion at home. A family of four would like to have a home cooked meal with the same quality you would expect in a casual dining setting, but having that at home."

"I can feed four people for 75 bucks, with some leftovers in the morning, which is a significant saving over if you were going to be going out and dining at a restaurant."

At home photography

"You'll notice the photography all of the family packages here. They really make it look like it is on your dinner table, it's on serving platters on nice wood tables. They really want to evoke the imagery of what it will look like in your home."
